The process of

is something like this: the plant matter is placed in a large bin that allows steam to rise through it. The steam vapors carry the essential oils from the plants, which are then carried through a coil and deposited in another holder. The steam evaporates, leaving only the essential oil behind.
The water that evaporates off the essential oil is also fragrant, and is called a hydrosol
Why is Steam Distillation of Essential Oils Important?
Steam distillation of essential oils is important because the steam must be maintained at a low enough temperature so that it will maintain the chemical purity of the essential oil. Just like when we cook foods we destroy valuable enzymes and certain nutrients and proteins are altered, when we overheat essential oils, valuable constituents are destroyed.

It is important to purchase essential oils that have been produced with the chemical purity foremost in mind. Especially when essential oils will be used with the intention of stabilizing mood, it is very desirable that they contain absolutely no impurities, fillers, or synthetic fragrances, and be produced without chemical additives or pesticides.
